Thank you. I've bookmarked it for next time. I think I actually did most of that but for some reason the whey never developed those curds under heating.

I make about three litres of yoghurt at a time using this simple method. That reduces to about two litres when I strain it (I like a thick, creamy Greek style texture), giving me a litre (about a US quart) of greenish-yellow yoghurt whey. I detest waste so I was looking for a way to use it.

That whey went straight through the cloth without any residue; it went in the backyard compost after it cooled. I'll try again in a couple of weeks

Picked up a can of "Light Coconut Milk" at Trader Joe's yesterday.  Front of label says "65% less fat and 65% fewer calories than regular coconut milk."  Nutrition Facts on back says 1/3 C serving has 4g carbs, 0g protein,and 4g fat, 3g of which are saturated and none of which is trans fat.  Ingredients are coconut milk and water.  it's also a "Product of Thailand".  I tried drinking a few sips today, and it tasted so much like Milk of Magnesia, I'm afraid there's something wrong with my tastebuds!  It has "Best before 4/01/13" stamped on the top of the can, so I would think it should be good for another year and a half.  Anyway, I refrigerated most of it for future experimenting.....

I haven;t tried tasting the coconut milk I have without cooking it first, so cannot say it tastes any different than TJ's...

Diagnosed Type 2, with an A1c of 11.4 in 2003; averaging a 5.0 A1c since then with diet, exercise and Glipizide XL + meds for blood pressure and cholesterol.

Trader Joe's has a great "Healthy 8" chopped veggie mix, consisting of broccoli, carrots, green cabbage, red cabbage, jicama, green bell pepper, radish, and celery.  It would take me forever to chop all those veggies so finely.  Sold in a 1 lb plastic container ready for snacking or cooking. 0 Fat, 6g cabs per 3/4 cup.  "For salads, sauteing, or anytime you need fresh veggies."  I mixed it with my previously purchased Edamame Caviar (soybeans, black beans, garbanzo beans, red and green bell peppers, red onions, parsley, seasoned rice vinegar, sugar, and salt), but might try cooking it with some of the leftover light coconut milk.  Hubby likes the veggie/bean mix, and put some on a chicken breast for dinner.  So far, I have only eaten a little of it with a strip of grilled chicken breast that I shared with Dawg, but I love the quick and easy versatility of this mixture.

I've been using Kraft's shredded fat free cheddar and Kroger's shredded fat free mozzarella on the Kroger's Edamame Caviar and Trader Joe's Healthy 8 chopped veggies, and the Kraft shredded fat free cheddar tastes better and has a better texture than the Kroger shredded fat free mozzarella, which is a little dry, but is okay when mixed with the Kraft's.  Kraft used to make a good fat free shredded mozzarella, too, but I guess I'm going to have to look somewhere besides Kroger for it.  Please let me know if you happen to see it and where.  Thanks!

I don't care whether my blueberries are orgainic or not.  I just like big, blue ones that aren't all shriveled-up.  If they taste good, even better.  So when I spotted THESE at Fresh Market the other day, they looked so big and beautiful (just like those pictured on the Blue Mountain site - and almost as big!) that I bought a couple of containers, knowing that just because they were big, blue, and beautiful was still no guarantee as to how good they would actually taste.  LOL  A calculated risk.  But, I gotta tell 'ya: they exceeded my expectations so much that I wouldn't mind going back to get some more.  Again and again.  I only have 1/4 cup (5g carbs) or less every morning in my semi-home-made semi-whole grain cereal/nut mix with semi-skim/semi-fat free Silk unsweetened soy milk, so even a small pack will last me a while.  Plump and juicy -- it'll be a while before they shrivel up, I'll bet'cha -- even if I lose them in the back of the fridge!  I hope you can find some that look and taste like these.

So I bought another little container of the Blue Mt. blueberries yesterday.  And also another carton from a different grower.  They tasted about the same, but neither was as good as the first batch of Blue Mountain's.  Which just goes to show that sometimes they're better than at other times.  Keep looking, and checking them out.  They're always good, but with different degrees of goodness.  Yesterday's were more tart.  I guess I'll get used to them.  Going to mix the two boxes from the two different growers together and hope for the best.....

Picked up THIS pack of Seapoint Farms Dry Roasted Edamame "The Wonder Veggie" at Fresh Mkt. yesterday.  It's been a while since I've tried any dry roasted edamame, so thought I'd check them out.  Turns out they're pretty good.  Nice and crunchy.  Not too much salt.  10g carbs and 14g protein per 1/4 cup.  They say it's only 2g net carbs because of the 8g fiber which they're deducting.  I just call it 10g carbs with the bonus of high fiber.  But I'm only eating less than a handful, so it's hardly enough to bother counting either way.
