Made this casserole for Chicken Cordon Bleu tonight. It was delicious and a big hit. Pretty easy to make too. I left out the dill because I didn't have any in the house.
The recipe was from Linda's Low Carb website. Tons of great low-carb recipes there and I love that she rates them all at the bottom.

Tried the Hamburger & Broccoli Alfredo casserole at Linda's Low Carb site. It was very good. Husband and daughter both gave it a thumbs up.
If you haven't checkout out this website, you really should take a look. I am finding so many recipes I am going to try.

Eileen, thanks for reminding me of this site. I used to spend a lot of time there when I was first diagnosed.
I had forgotten about it.
Your Hamburger/Broccoli Alfredo sounds yummy. I'll bet it would be good with chicken breast too.
Thanks again for the link.
You're very welcome! It's really a great site. This morning I made her "Better Than Boxed Low-Carb Pancake" and last night I prepared her "Houston Chicken" both were delicious. It's hard to feel deprived when there are so many great tasting low-carb recipes to try!
Here's links to the 2 recipes I just tried if anyone is interested:
I followed the second "Easier" method for preparing the Houston Chicken and made enough chicken breasts for my whole family. Everyone enjoyed it.
