Meals under 20g carbs?

I'm trying to go low(er) carb.

So far, the only meals I can come up with are meat/cheese sandwiches (my bread is exactly 20g for 2 slices). I'm looking for stuff that I can take into the office for lunch.

Ideas? Please? It needs to be very, very easy.

Meals under 20g carbs?

My first thought was peanut butter - that was my favorite tax season lunch because it is fast & easy in the morning, but that has 6 grams of carbs. How about tuna?

1/2 sandwich every day is money for me.

Meals under 20g carbs?

Today I did 'low carb', but way overdid it on fat intake.

I ate:

Sausage sandwich
Veggie crisps
Salmon sandwich
Yogurt
Cheese stick
Pecans
Walnuts
Chicken breast
Banana

And here's what that came out to (check out the fat number!):

See if any of these appeal to you:

You can use a low-carb wrap instead of bread, or you can even wrap sandwich filling in a leaf of romaine lettuce.

If you have access to a microwave, or use a thermos, you can try vegetable soup with no starchy veggies, with chicken or some other meat. You can even cook ahead and freeze single servings. (You can add rice or pasta to the same soup at home for a family meal.)

A cup of cottage cheese has 10-12g carbs. You can add a few salad veggies or some berries.

Use some of those bagged and prewashed salad greens to make a salad, with left over meat, grated cheese, hard boiled egg, chopped nuts. Oil and vinegar makes a good low carb dressing.

Making a grocery list for tomorrow. I'm normally such a terrible eater, this is going to be tough.

Hi Julie - Other than the sausage and assuming your yogurt was non-fat, all of your fat was healthy fat and I wouldn't stress about the total number of grams unless you're trying to lose weight. If you cut down on fat and go low carb, you have to really load up on protein which gives your kidneys more of a workout.

You have to give yourself a break on the fat... Low carb/low fat means only thing left is lean protein. aka.. turkey/chicken/fish... 20 carbs for a meal is still not Atkins level, so I understand your concern. But I find water is just not enough for a meal
